Perfect Crispy Potatoes

  • 1.5 pound Fingerling Potato - (or small purple, red, or yellow potatoes)
  • 2 tablespoon Coconut Oil
  • 0.13 teaspoon Sea Salt
  • 0.13 teaspoon Freshly Ground Pepper
  • 0.33 cup Parmesan Cheese - optional
  • Preheat the oven to 500 F, while heating a medium sized pot filled with water and pinch of salt on high and bring to a boil. Once boiling, add the potatoes, and boil for 3-7 minutes depending on the size. Poke the potatoes with a fork to check tenderness, and once slightly soft, drain. Toss the potatoes with melted coconut oil, half of the parmesan cheese, salt and pepper. Transfer to a baking sheet and bake for about 15 minutes. Remove the potatoes from the oven every 5 minutes to shake the pan around. Once the skin is crispy, sprinkle with the remaining parmesan cheese and serve.
