  • 2 teaspoon Coconut Oil
  • 1.5 pound Chuck Roast
  • 1 teaspoon Salt
  • 1 cup Bone Broth
  • 1.5 cup Pomegranate Juice - pure
  • 2 Carrots - chopped
  • Preheat oven to 350 F.
  • Heat a Dutch oven on the stovetop to medium high heat with coconut oil, and season beef with salt. Sear the chuck roast for 5 minutes on each side. Add broth, 1 cup of pomegranate juice, and chopped carrots to the pot, cover, and place in the oven.
  • After one hour, remove from oven and add the remaining ½ cup of pomegranate juice. Cover, and add back to the oven for an additional 1 ½ to 2 hours. The beef should be tender and easy to pull apart with two forks by this time.
We recommend using pure pomegranate juice with no added sugars or other fruit juices. We also recommend using homemade bone broth that is free of an high fodmap ingredient, such as garlic or onions.
Feel free to replace bone broth with equal amounts of water or low FODMAP broth.
