Cucumber Yogurt Sauce

  • 0.5 cup Yogurt - (24 hr homemade)
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 tablespoon Lemon Juice
  • 2 tablespoon Fresh Parsley - minced
  • 2 tablespoon Fresh Cilantro - minced
  • 0.25 cup Cucumber - grated
  • 0.5 teaspoon Cumin Seed
  • Sea Salt - to taste
  • Ground Black Pepper - to taste
  • Prepare the yogurt sauce by adding all the sauce ingredients, except the cumin seeds, into a medium bowl. Stir well to combine.
  • While keeping your hands over the bowl rub the cumin seeds between your fingers to release the essential oils, and allow them to fall into the mixture. Mix and season with salt and pepper to taste.
If pectin does not cause you distress, then Green Valley lactose free yogurt can be used in place of the homemade 24 hour yogurt. This goes great as a side to spicy meat or chicken dishes or can even be a great topping on grain dishes, wraps, etc.
