- My Notes -

  • 1 teaspoon Coconut Oil
  • 1 large Banana
  • 3 tablespoon Rolled Oats
  • 2 tablespoon Walnuts - chopped
  • pinch Sea Salt - to taste
  • 1 tablespoon Maple Syrup
  • Plain Yogurt - to taste
  • Fresh Berries - to taste
  • To make the caramelized breakfast bananas, in a medium frying pan heat oil over medium heat. Slice banana in half lengthwise and cut into quarters.
  • With flat side facing down place the banana quarters into the pan. They should make a sizzling noise. Allow the bananas to brown and flip onto other side.
  • Toss the rolled oats and walnuts around the bananas and sauté. Sprinkle everything with a pinch of salt.
  • Drizzle maple syrup over the bananas and oats and sauté until bananas are browned and caramelized on the bottom as well.
  • In a bowl add a scoop of lactose free yogurt. Top with fried bananas and oat mixture. Garnish with fresh berries.
You'll find 24 hour yogurt recipe on our site, or you may use Green Valley lactose free yogurt (if you tolerate pectin well).
