  • 0.5 Banana - ripe
  • 0.25 cup Canned Pumpkin Puree
  • 2 tablespoon Oat Flour
  • 1 large Egg
  • 0.25 teaspoon Baking Powder
  • 0.5 teaspoon Vanilla
  • 0.5 teaspoon Pumpkin Pie Spice
  • Coconut Oil - to taste
  • Preheat oven to 175 degrees. Place a ceramic plate or baking sheet into the oven.
  • Meanwhile, toss all the above ingredients into a blender. Blend until smooth.
  • Heat a non-stick pan over medium heat, and then reduce heat to medium low. Add a tad coconut oil or ghee (it should sizzle but not burn) and pour ¼ cup of the mixture into the pan. Cook for ~2 minutes and then flip on to the other side and finish cooking.
  • Keep pancakes warm in the preheated oven until ready to serve. Enjoy with peanut butter, maple syrup, fresh raspberries, or even top with a fried egg.
