Banana Pumpkin Pancakes

INGREDIENTS
- 0.5 Banana - ripe
- 0.25 cup Canned Pumpkin Puree
- 2 tablespoon Oat Flour
- 1 large Egg
- 0.25 teaspoon Baking Powder
- 0.5 teaspoon Vanilla
- 0.5 teaspoon Pumpkin Pie Spice
- Coconut Oil - to taste
INSTRUCTIONS
- Preheat oven to 175 degrees. Place a ceramic plate or baking sheet into the oven.
- Meanwhile, toss all the above ingredients into a blender. Blend until smooth.
- Heat a non-stick pan over medium heat, and then reduce heat to medium low. Add a tad coconut oil or ghee (it should sizzle but not burn) and pour ¼ cup of the mixture into the pan. Cook for ~2 minutes and then flip on to the other side and finish cooking.
- Keep pancakes warm in the preheated oven until ready to serve. Enjoy with peanut butter, maple syrup, fresh raspberries, or even top with a fried egg.
