Matcha and Chocolate Collagen Energy Balls

INGREDIENTS
- 1 cup macadamia nuts
- 6 dates - pitted
- ⅛ cup raisins
- ½ cup almond meal - or almond flour
- 2 tbsp cocoa powder
- ½ cup whey protein - (Levels brand)
- 2 tbsp maple syrup
- 1 tsp peppermint extract
- 1 tbsp matcha - green tea powder
INSTRUCTIONS
- Place the macadamia nuts in a food processor and process until they form a crumbly meal. Add the dates, raisins, almond meal, collagen and cocoa powder and process for 30 seconds. Add the remaining ingredients, except the matcha, and 2 tablespoons of water and process until a sticky mass forms.
- Transfer the mixture to a large bowl.
- Form balls between your fingers and palms and the roll in the matcha and place on a parchment or wax paper lined small sheet pan.
- Place the sheet pan in the refrigerator for 30 minutes. Store in an airtight container in the refrigerator.
