GutRx Crustless Quiche Lorraine

INGREDIENTS
- 1 tablespoon Coconut Oil
- 3 strip Bacon
- 5 Eggs
- 1 cup Unsweetened Almond Milk
- 3 Green Onion - sliced (green parts only)
- 2 ounce Grated Parmesan Cheese
- 0.13 teaspoon Sea Salt
- 0.13 teaspoon Ground Black Pepper
INSTRUCTIONS
- Preheat the oven to 350ºF.
- Grease a round quiche dish with coconut oil.
- Heat a non-stick frying pan over medium heat. Add the bacon and cook through. Set aside.
- Reserve a few pieces of bacon for garnishment.
- In a large bowl, beat the eggs until combined.
- Add in the almond milk and mix to combine. Add in the bacon, green onions, and parmesan. Season with salt and pepper. Stir to combine.
- Carefully pour into the quiche dish. Top with the remaining bacon pieces. Carefully place the dish in the oven.
- Bake for 40-50 minutes until the quiche is cooked through and golden on top. Remove from the oven.
- The quiche can be eaten hot or cold.
NOTES
Make sure the bacon is free of celery juice, celery powder and sweeteners. Plain unsweetened almond milk is a low fodmap choice as well.
