Cheesy Basil Lemon Dressing

INGREDIENTS
- 2 cup Fresh Basil - loosely packed (blanche, see below)
- 5 tablespoon Toasted Pine Nuts
- 0.5 Lemon - juiced
- 0.25 cup Extra Virgin Olive Oil
- 0.5 cup Parmesan Cheese - shredded
- 1 pinch Sea Salt
- 1 pinch Ground Black Pepper
INSTRUCTIONS
- To make the recipe, blanch the basil. Place in lightly boiling water for 30 seconds. Remover with a strainer and place in an ice water bath (6-10 cubes of ice in water) for an additional 30 seconds (to stop the cooking process). Allow the basil to drain, and then blend in a food processor along with the remaining ingredients.
