Vanilla Overnight Oats With Fresh Berries And Coconut

INGREDIENTS
- 0.25 cup Oats
- 1 teaspoon Chia Seeds
- 0.5 teaspoon Cinnamon
- 2 tablespoon Shredded Coconut - unsweetened
- 1 drop Vanilla Extract
- 1 teaspoon Pure Maple Syrup
- 0.5 cup Almond Milk
- 0.25 cup Raspberries - fresh
- 0.25 cup Strawberries - sliced
- 0.25 Yogurt - (optional)
INSTRUCTIONS
- To make the overnight oats, combine all the dry ingredients in a bowl and mix well. Then add all other ingredients except the berries. Mix well.
- Gently fold in the berries. The mixture should be very runny but don’t be alarmed – the oats and seeds will soak it all up overnight! Cover and refrigerate overnight.
- Once ready to eat top with yogurt (homemade 24 hour yogurt preferred) and an extra drizzle of maple syrup if desired.
NOTES
We recommend using organic, certified gluten free oats. The amount of milk you use will depend on your preferred consistency. Raspberries and strawberries can be substituted for any other low fodmap friendly fruit (including blueberries).
To make this extra scrumptious, try 1 teaspoon vanilla bean paste in place of the drop of vanilla extract.
Feel free to substitute the almond milk for any other dairy free milk. For a lactose free/vegan version, omit the yogurt and use water or increase the amount of chosen milk. You could also add mashed banana, but add it just before eating otherwise it will brown.
