Sardine Lettuce Wrap

INGREDIENTS
- 2 teaspoon Dijon Mustard
- 1 tablespoon Lemon Juice
- 1 tablespoon Capers
- 1 tablespoon Fresh Herbs - chopped (parsley, thyme, oregano, chives)
- Sea Salt - to taste
- Ground Black Pepper - to taste
- Radicchio - to taste
- Mixed Greens - to taste
- 4 Lettuce Leaf
- 1 can Sardines in Oil
INSTRUCTIONS
- In a medium bowl, mash the sardines and olive oil together with a fork. Stir in the Dijon mustard, lemon juice, fresh capers, and minced herbs of your choice.
- Season with additional sea salt and fresh ground pepper to taste. Lay out your choice of lettuce wrap and fill with a handful of mixed greens and top with a spoonful of sardine mash. Fold over the the sides and eat like a mini "wrap ".
