Pretty Pink Goat Cheese Spread

INGREDIENTS
- 3.5 ounce Goat Cheese
- 1 small Beet
- 0.13 teaspoon Sea Salt
- 0.5 cup Distilled White Vinegar
- 1.5 teaspoon Preserved Lemon
INSTRUCTIONS
- Steam the beet, peel, cut into 1 inch cubes, and let it sit in vinegar and salt overnight or up to 2 weeks. In a food processor, combine the pickled beet and preserved lemon peel and pulse into a relish consistency. Add the goat cheese and pulse again until fully combined. Serve cold.
NOTES
this recipe contains spreadable goat cheese and it is high in lactose. Please use caution if you are lactose intolerant.
