INGREDIENTS
- 3 Carrots - shaved
- 2 teaspoon Lemon - preserve
- 2 teaspoon Toasted Sesame Seeds
- 1 packet Smoked Salmon - 5 oz
- 3 tablespoon Fresh Cilantro - chopped
- 2 tablespoon Green Onion - chopped,green part only
- 1 Cucumber - julienned
- 0.25 cup Water
- 2 tablespoon Toasted Sesame Oil
- 1 packet Nori (Dried Seaweed) - (at least 6 sheets)
INSTRUCTIONS
- Shred carrots with a vegetable peeler and let marinate in lemon preserve juice and sesame seeds. Place each ingredient in a small bowl, with an additional small bowl of water, and lay a nori sheet on a dry surface. Divide smoked salmon into six portions.
- Lay the first serving of smoked salmon about 2 inches up from the bottom on the piece of nori, evenly and horizontally. Then, layer about 2 Tablespoon of the carrot mixture, and 2 Tablespoon of the cucumber in the same fashion.
- Spread 1 Tablespoon of the avocado lime sauce (recipe on site) on top of the vegetables. Wet the top edge of the nori with water and your finger, and roll upwards, making sure the insides are packed tightly. Seal with additional water, and brush the entire outside of the roll with toasted sesame oil. Cut it into eight pieces, and repeat for the next five rolls.
NOTES
We recommend using smoked salmon without any added sugars or garlic. 1/8 of an avocado is considered low fermentable.
