INGREDIENTS
- 1 pound Alaskan Halibut - cut into 1” cubes
- 0.25 cup Olive Oil
- 0.5 Lemon - juiced
- 0.5 cup Fresh Cilantro
- 0.13 teaspoon Sea Salt
- 0.13 cup Fresh Chives - green parts only
- 0.13 teaspoon Pepper
- 0.13 teaspoon Sea Salt
- 0.5 cup Olive Oil - (use our herb oil recipe)
- 1 package Skewers
- 1 tablespoon Coconut Oil
- 1 Lime - quartered
INSTRUCTIONS
- To make the skewers, chop fish into even sized cubes, about 1 inch x 1 inch. Place in a bowl with lemon juice, salt, pepper, herb oil, and mix. Let it marinate, covered in the fridge for at least 1 hour.
- Soak wooden skewers in water for at least 10 minutes before sticking 3-4 pieces of fish on each skewer.
- Heat a stovetop grill, or your barbeque on high. Brush with coconut oil (be careful to not get burned), and cook skewers on each side for about 2 minutes, or until fish is completely cooked through. Serve with freshly squeezed lime juice.
- To make the herb oil, blend together in a food processor or blender, and strain through a fine mesh strainer. Store in the fridge for up to three days.
NOTES
We recommend our Herbed Oil recipe. You may also use any other GOLO ‘green’ pesto recipe with this dish.
Feel free to replace the halibut with any other firm white fish.
