GutRx Cilantro Lime Grilled Shrimp Salad

INGREDIENTS
- 1 teaspoon Coconut Oil
- 0.5 cup Fresh Cilantro - leaves
- 1 container Salad Greens
- 0.5 cup Fresh Cilantro - stems
- 2 Lime - juiced
- Cilantro Lime Dressing - to taste
- 1 tablespoon Tamari
- 1 pound Shrimp - cleaned and unshelled
- 3 Lime - quartered
- 1 cup Fresh Cilantro - chopped
INSTRUCTIONS
- Make the Cilantro Lime Shrimp Marinade…. blend together cilantro stems and leaves, limes, and tamari in a blender until smooth. Pour over shrimp, cover and marinate for 1 hour in the refrigerator.
- Heat a stove-top skillet with coconut oil on medium high heat, and sauté marinated shrimp until fully cooked.
- Remove, and place over a bed of salad greens mixed with 2 Tbsp chopped cilantro, and garnish with squeezed lime.
NOTES
Salad greens can be any tender green. Other vegetables can also be substituted/added.
We recommend using Thai Kitchen brand gluten free tamari.
