Preheat the oven to 350ºF.
Grease a round quiche dish with coconut oil.
Heat a non-stick frying pan over medium heat. Add the bacon and cook through. Set aside.
Reserve a few pieces of bacon for garnishment.
In a large bowl, beat the eggs until combined.
Add in the almond milk and mix to combine. Add in the bacon, green onions, and parmesan. Season with salt and pepper. Stir to combine.
Carefully pour into the quiche dish. Top with the remaining bacon pieces. Carefully place the dish in the oven.
Bake for 40-50 minutes until the quiche is cooked through and golden on top. Remove from the oven.
The quiche can be eaten hot or cold.
