Preheat oven to 175 degrees. Place a ceramic plate or baking sheet into the oven.
Meanwhile, toss all the above ingredients into a blender. Blend until smooth.
Heat a non-stick pan over medium heat, and then reduce heat to medium low. Add a tad coconut oil or ghee (it should sizzle but not burn) and pour ¼ cup of the mixture into the pan. Cook for ~2 minutes and then flip on to the other side and finish cooking.
Keep pancakes warm in the preheated oven until ready to serve. Enjoy with peanut butter, maple syrup, fresh raspberries, or even top with a fried egg.
