Sweet Potato, Leeks And Smoked Paprika Frittata

Ingredients
  

  • 3 tablespoon Olive Oil
  • 1.25 cup Sweet Potato - shredded
  • 1 Leek - diced (green part only)
  • 0.5 teaspoon Smoked Paprika
  • 3 tablespoon Fresh Chives - chopped
  • 0.5 teaspoon Dried Oregano
  • 0.25 cup Fresh Parsley - chopped
  • 0.5 teaspoon Sea Salt
  • 0.5 teaspoon Black Pepper
  • 6 Eggs
  • 0.5 cup Parmesan Cheese - aged three months

Instructions
 

  • In an oven proof medium sized skillet, heat over medium high heat, add the coconut oil and sauté the potatoes and leaks until tender and slightly caramelized (browned). Stir in the smoked paprika and sauté for an additional minute.
  • In a medium size bowl, whisk the herbs, salt, pepper and eggs together, and then pour into the pan.
  • Push the eggs around a little, until they start to set at the bottom of the pan. Turn the heat to low and cook for 12 minutes, until set (except for the very top). Transfer to the oven and broil on low, until the top is firm and slightly golden. This will only take a few minutes, so watch this carefully.
  • Top with parmesan and place it back under the broiler to melt the cheese. Garnish with extra parsley.
