Refreshing Orange Coconut Milk

Ingredients
  

  • 1 cup Coconut Milk - unsweetened canned full fat
  • 2 tablespoon Sugar - (optional)
  • 4 cup Orange Juice
  • 8 Ice Cubes
  • Mints - to taste

Instructions
 

  • Mix together the coconut milk and sugar (may replace with maple syrup or 1 tablespoon clover honey--see notes below) until the sugar is dissolved. Place the milk into the freezer for 5-10 minutes to chill until very cold.
  • Remove from the freezer and add the ice cubes to the coconut milk. Slowly pour the orange juice into the milk while stirring constantly. This keeps the milk from
  • curdling. Serve immediately with a sprig of mint if desired.

Notes

We recommend using Native Forest unsweetened canned coconut milk.
Honey contains fructose. Northern latitude honey (clover, raspberry, alfalfa) contain a closer ratio of fructose to glucose than tropical honey (like the honey that Monash University tested and noted as a high fodmap food). Since northern latitude honey contains a closer ratio of fructose to glucose, this improves fructose absorption and we find that many people with fructose intolerance can enjoy a small amount of northern latitude honey. Please try this and see how you do (easy enough to test out in tea, like Rooibos tea). Guest Guru Patsy Catsos recommends to her patients and readers, to not include honey.
