Instructions
Pulse the chicken in a food processor until smooth.
Transfer into a medium bowl and add the tomatoes, cucumbers, olives, feta cheese, mayonnaise, oregano
and lemon juice and combine. Season with salt and pepper to taste.
Serve with romaine lettuce or rice crackers as desired.
