GutRx Cheesy Arugula Lemon Dressing

Ingredients
  

  • 2 cup Arugula - loosely packed (blanche, see below)
  • 5 tablespoon Toasted Pine Nuts
  • 0.5 Lemon - juiced
  • 0.25 cup Extra Virgin Olive Oil
  • 0.5 cup Parmesan Cheese - shredded
  • 1 pinch Sea Salt
  • 1 pinch Pepper - ground

Instructions
 

  • To make the recipe, blanch arugula. Place in lightly boiling water for 30 seconds. Remover with a strainer and place in an ice water bath (6-10 cubes of ice in water) for an additional 30 seconds (to stop the cooking process). Allow the arugula to drain, then blend along with the remaining ingredients in a food processor until smooth.
