Cook rice noodles according to package. Set aside.
To make homemade hoisin sauce, whisk together tamari, honey, vinegar, sesame oil, black pepper in a small bowl and season further with salt and pepper.
In a medium sized skillet, heated over medium heat add the tempeh, peanuts, green onions, cilantro and homemade hoisin sauce. Sauté until the tempeh is completely warmed throughout. Set aside.
To serve: layer the rice noodles and tempeh in a butter lettuce leaf and garnish with chopped peanuts.
