To make the skewers, chop fish into even sized cubes, about 1 inch x 1 inch. Place in a bowl with lemon juice, salt, pepper, herb oil, and mix. Let it marinate, covered in the fridge for at least 1 hour.
Soak wooden skewers in water for at least 10 minutes before sticking 3-4 pieces of fish on each skewer.
Heat a stovetop grill, or your barbeque on high. Brush with coconut oil (be careful to not get burned), and cook skewers on each side for about 2 minutes, or until fish is completely cooked through. Serve with freshly squeezed lime juice.
To make the herb oil, blend together in a food processor or blender, and strain through a fine mesh strainer. Store in the fridge for up to three days.
