Freestyle Frittata

Ingredients
  

  • 2 tablespoon Extra Virgin Olive Oil
  • 8 large Eggs
  • 1 tablespoon Fresh Herbs - (rosemary, thyme, oregano, marjoram, sage, etc)
  • 0.5 cup Green Onion - sliced,(green parts only)
  • 0.5 cup Milk - (lactose free)
  • 0.75 teaspoon Sea Salt
  • 0.25 teaspoon Pepper

Instructions
 

  • Customize your Frittata with any of the following:
  • 1 cup diced veggies (green beans, bell pepper, zucchini, cherry tomatoes, spinach,kale, red/yellow potatoes, fennel)
  • ¼-1/2 cup grated aged cheese (parmesan, asiago, feta, cheddar, etc)
  • ¼ cup crumbled bacon, smoked salmon bits, or prosciutto
  • ¼ cup freshly minced parsley, basil, or chives
  • Preheat oven to 350 degrees Fahrenheit. Meanwhile heat an oven proof cast iron skillet over medium heat. Add 2 tablespoons olive oil, the tablespoon fresh minced herbs of your choice, and ½ cup sliced green onions. Cook until fragrant, about 5 minutes.
  • In a bowl whisk together the eggs, milk, salt and pepper. Then add any of the frittata customizations of your choice. Pour the egg mixture into your cast iron skillet, and spread out the mixture evenly.
  • Cook until the edges start to pull away from the pan, about 5-7 minutes. Then place the skillet into the oven to bake until set for another 16-18 minutes.

Notes

We recommend bacon free of celery salts.
