In a medium bowl, mash the sardines and olive oil together with a fork. Stir in the Dijon mustard, lemon juice, fresh capers, and minced herbs of your choice.
Season with additional sea salt and fresh ground pepper to taste. Lay out your choice of lettuce wrap and fill with a handful of mixed greens and top with a spoonful of sardine mash. Fold over the the sides and eat like a mini "wrap ".
