Mediterranean Chicken Salad

Ingredients
  

  • 2 cup Chicken Breast - cooked and cubed
  • 1 Roma Tomato - diced
  • 0.25 cup Cucumber - peeled and diced
  • 12 Kalamata Olives - pitted and diced
  • 0.5 cup Crumbled Feta Cheese
  • 0.5 cup Mayonnaise
  • 1 tablespoon Fresh Oregano - chopped
  • 2 teaspoon Lemon Juice
  • Sea Salt - to taste
  • Ground Black Pepper - to taste
  • Romaine Lettuce - to taste

Instructions
 

  • Pulse the chicken in a food processor until smooth.
  • Transfer into a medium bowl and add the tomatoes, cucumbers, olives, feta cheese, mayonnaise, oregano
  • and lemon juice and combine. Season with salt and pepper to taste.
  • Serve with romaine lettuce or rice crackers as desired.
