Ingredients

  • 1 pound Ground Beef - bison
  • 1 tablespoon Olive Oil
  • 0.5 cup Green Onion - chopped,green part only
  • 1 teaspoon Salt
  • 2 tablespoon Fresh Ginger - minced
  • 1 tablespoon Maple Syrup
  • 1 Egg
  • 1 tablespoon Coconut Oil

Instructions

  • To make the meatballs, mix together the ground bison, olive oil, green onion, salt, ginger, maple syrup, and egg in a medium sized mixing bowl with hands. Form into 12 meatballs and set in the fridge for about 20 minutes. Heat a large skillet over medium heat, add coconut oil, and fry the meatballs on each side, until the middle is fully cooked.

Notes

Bison is generally a lean meat, so we added the olive oil to prevent the end product from being too tough. If you find ground bison with some fat in it, feel free to omit the olive oil.
Need an egg replacement? **Recipe below is equivalent to one egg. Multiple by the number of eggs called for in the original recipe: Whisk 1 tablespoon of ground chia seed (measured after grinding) with 3 tablespoons of water. Set in the frig for 15 minutes. Add gel-like mixture into the recipe where the egg is called for.
