Carrot And Red Cabbage Slaw

Ingredients
  

  • 1 small Purple Cabbage - head
  • 1 teaspoon Sea Salt
  • 2 medium Carrots
  • 1 tablespoon Red Wine Vinegar - + 1 teaspoon
  • 1 Lime - juiced
  • 1 Lemon - juiced
  • 1 cup Kale - thinly sliced
  • 1 tablespoon Maple Syrup
  • 0.5 Fresh Cilantro - chopped

Instructions
 

  • Thinly slice (shred) the cabbage (you can use a mandolin or the food processor for this as well) and julienne the carrots. Massage with salt, red wine vinegar, lime, lemon juice and let sit in the fridge for 20 minutes. Add the kale, maple syrup, and cilantro and massage further. Serve cold.
