Breakfast Stir-Fry

Ingredients
  

  • 1 tablespoon Coconut Oil
  • 1 pound Ground Beef
  • 1 teaspoon Fresh Ginger - grated
  • 2 Carrot - diced
  • 2 stick Celery - diced
  • 1 Red Pepper - diced
  • 4 tablespoon Tamari - wheat free
  • 2 tablespoon Fresh Cilantro - chopped
  • 0.13 teaspoon Sea Salt
  • 0.13 teaspoon Freshly Ground Black Pepper

Instructions
 

  • To make the stir-fry, heat a large wok over high heat. Melt the coconut oil in the wok, then add the ground beef. Stir the meat vigorously until it has cooked through and any liquid has evaporated.
  • Add the ginger, carrot, celery, and red pepper. Stir-fry for 2 minutes or until the vegetables are starting to soften. Add in the tamari and stir-fry for another minute. Season with salt and pepper to taste.
  • To serve, divide the mixture between four bowls and sprinkle some chopped cilantro over the top.

Notes

Need soy free? Replace tamari with coconut aminos.
